Breakfast

-Chorizo Cheddar Stuffed Omelet-

Ingredients

4 oz. chorizo
½ cup full fat
Cheddar cheese, grated
½ cup fresh or frozen spinach, chopped
1/3 cup full-fat heavy whips cream
½ onion, finely chopped
¼ tsp salt
¼ tsp freshly ground
Black pepper
½ cup full-fat Cheddar cheese, grated
1 avocado, cubed
Sour cream, to serve

Directions

Cook the chorizo as per the instructions on the package. Once it is cooked cut it into small pieces and place aside. In a bowl, beat the eggs with the spinach, cream and onion. Place a non-stick pan over medium heat and pour the egg mixture. Turn the pan to evenly spread the mixture. Once the omelet is golden from the bottom, flip onto the other side. Cover the pan for a few minutes until the omelet is cooked and golden. Remove the cover and sprinkle the cheese and chorizo over the omelet. Allow the cheese to melt then transfer the omelet to a plate. Roll the omelet while it is still hot, such that the melted cheese is inside. Serve with a dollop of sour cream and avocado.

Lunch

Eggplant Caprese with Roasted Aioli-

(Total Time 30 mins Serves 2)

Ingredients

2 large eggplants
3 garlic cloves, crushed
4 tbsps. Mayonnaise
1 cup lemon basil leaves
1 cup mozzarella, shredded
2 cups baby spinach leaves
¼ cup roasted pine nuts

Instructions

Turn on your griller or toaster. Chop the head of the eggplants and slice them in half lengthwise, discard the head. Prepare the aioli, preheat a saucepan over medium heat. Sauté the garlic for half a minute. Remove the saucepan from the heat. Add the mayo to the garlic and mix. Stir in the basil leaves. Spread

some of the aioli over each slice of eggplants and top with mozzarella and pine nuts. Sandwich the eggplants and place in the grill or toaster until the cheese melts. Serve hot.

Dinner

Hot Chorizo Tacos

(Total Time 30 min Serves 4)

Ingredients

3 cups sharp Cheddar cheese
1 lbs. minced chorizo
1 lbs. minced beef
2 tbsps. smoked paprika
1 tbsp. red pepper flakes
Pinch of salt
1 tbsp. ground cumin
1 can 10-ounce diced tomatoes

Directions

Preheat the oven to 350 degrees F/ 175 degrees C and line a baking sheet with parchment paper. Divide the cheese into quarters and pile each quarter on a section of the baking sheet. Melt the cheese piles into a preheated oven for 5 minutes. Leave the melted cheese for 5 minutes before lifting them. Place the cheese circles, while they are still warm and flexible, over rolling log or any curved item. This will shape the cheese into taco shells. In a pan, add the chorizo and beef and cook on medium-high heat for 10minutes while stirring. Season with paprika, red pepper flakes, salt and cumin.
